



Ilan's Raw Chocolate
"Ilan's Raw Chocolate" is a workshop and chocolate store in kibbutz Genigar in Yzrael valley that was started by Ilan and Merav Rosenblit.
We strive to develop unique products that combine top-quality ingredients with exceptional taste. Minimal processing keeps the ingredients as close as possible to their natural, "raw" state, preserving their health benefits and rich flavors.

Marzipan
The praline flavors are slowly revealed throughout the tasting; the fruitiness of the chocolate blends with a natural almond flavor that slowly transforms into a delicate marzipan flavor that fills the mouth and merges with the chocolate flavor of the next bite. Praline is composed of refined sweetness.


70% organic raw cocoa solids, organic maple syrup, and a pinch of Atlantic sea salt wraps around natural cashew puree, agave syrup, maple syrup, and natural mint flavor extract.
Mint
The flavors of mint, cashew nuttiness, and the mild bitterness of chocolate combine in surprising and refreshing harmony.


Full-grain tahini from pre-germinated Ethiopian sesame seeds ground in a millstone, organic agave syrup, Sponaria root extract (which we make ourselves from the roots of the plant), organic apple cider vinegar, homemade vanilla extract and a pinch of pink Himalayan salt.
Halva
A fine, flavorful halva that melts in your mouth softly.

The chocolate
Our chocolate is a natural, vegan, nutritious and delicious delicacy that keeps all of the nutritious values in its ingredients. Most chocolate factories use cocoa beans that were toasted for a length of time in high temperatures.
Toasting the beans changes their chemical composition. Those changes cause the common and familiar chocolate to be - a candy, tasty and sometimes even high quality, but it isn't a health food.
Our chocolate is made from raw cocoa mass and raw cocoa butter, meaning it wasn't heated above 42 degrees Celsius, hence it keeps all of the nutritious values of the cocoa beans...


The process
Our chocolate is homemade, created from high quality raw materials that were carefully chosen.
We don’t use any auxiliary materials or additives for stabilizing the chocolate, nor making the texture or the shine of it.
Our stringent production process was developed for a long time to reach the wonderful taste and pleasant texture while keeping the nutritious values of the raw materials.
Raw chocolate is a material that is sensitive to light, temperature and humidity.
In our production process we successfully raised our chocolate’s withstanding against weather conditions so it’s able to be kept without any damage up to 29 degrees Celsius.



Ilan Rosenblit
Born 1962, a member of kibbutz Genigar
Ilan grew in Israel in Kibbutz Genigar. As an adult he worked in construction and dreamed about opening a business in the culinary area.
In 2015 he decided to make his dream come true and began exploring different sorts of foods.
While he tried different directions with various ingredients he stumbled into the raw chocolate and was enchanted by its taste and healthy qualities...
